Renovating a lobby in an operating hotel is a challenge. Repurposing remote basement spaces to become full service kitchens made it that much more difficult. The project included three kitchens two dining rooms, new skylights and a retail bakery. Despite years of planning there were many surprises along the way. Being nimble and resourceful was essential. Teamwork was paramount. The day dining and bakery are now open. Look for the fine dining to open in the fall.
